For the Crust:
- 1 cup packed brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup chopped pecans
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Mix 1 cup brown sugar and melted butter for topping. Spread evenly in pan. Sprinkle pecans over mixture.
- Whisk flour, baking powder, baking soda, spices, and salt in a bowl.
- In another bowl, beat pumpkin, sugars, eggs, oil, and vanilla until smooth. Gradually stir in dry ingredients.
- Pour batter over pecan layer in pan. Bake 35-40 minutes until toothpick comes out clean.
- Cool 5 minutes, then invert onto serving plate. Let topping drizzle down sides before removing pan.
