Potato Skillet

A hearty and comforting one-pan dish featuring crispy potatoes, savory vegetables, and melted cheese.

For the Crust:

  • 4 large potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add potatoes and cook for 10 minutes, stirring occasionally.
  3. Add onion, bell pepper, and garlic. Cook for another 5 minutes until vegetables soften.
  4. Stir in paprika, thyme, salt, and pepper. Cook for 2 minutes.
  5. Sprinkle cheese over the top and transfer skillet to the oven. Bake for 10-12 minutes until cheese is melted and bubbly.
  6. Garnish with fresh parsley before serving.
