For the Crust:
- 4 large potatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet over medium heat. Add potatoes and cook for 10 minutes, stirring occasionally.
- Add onion, bell pepper, and garlic. Cook for another 5 minutes until vegetables soften.
- Stir in paprika, thyme, salt, and pepper. Cook for 2 minutes.
- Sprinkle cheese over the top and transfer skillet to the oven. Bake for 10-12 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
