Pomegranate Raspberry Chia Pudding

For the Crust:

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh raspberries
  • 1/4 cup pomegranate seeds

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together chia seeds, almond milk, honey, and vanilla extract until well combined.
  2. Cover and refrigerate for at least 4 hours or overnight, stirring occasionally to prevent clumping.
  3. Once the chia pudding has thickened, layer it in serving glasses with fresh raspberries and pomegranate seeds. Serve chilled.
