Pistachio Crunch Muffins

Deliciously moist muffins with a nutty pistachio flavor and a satisfying crunchy topping.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shelled pistachios, finely chopped
  • 1 large egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 2 tbsp cold butter, cubed
  • 1/4 cup chopped pistachios for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and finely chopped pistachios.
  3. In another bowl, beat the egg, then mix in milk, oil, and vanilla. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Divide batter evenly among muffin cups. In a small bowl, mix brown sugar, cold butter, and chopped pistachios for topping until crumbly. Sprinkle over each muffin.
  5. Bake for 18-22 minutes or until a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

You can customize the seasonings to taste.
