For the Crust:
- 1/4 cup unsalted butter
- 1/2 cup brown sugar
- 1 can (20 oz) pineapple slices
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Melt butter in a 9-inch round cake pan, then sprinkle brown sugar evenly over the melted butter.
- Arrange pineapple slices on top of the sugar mixture and place a cherry in the center of each slice.
- In a bowl, whisk together flour, granulated sugar, baking powder, and salt. Add milk, oil, egg, and vanilla, mixing until smooth.
- Pour batter over the pineapple layer and spread evenly. Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes, then invert onto a serving plate while still warm.
