Pineapple Juice Bundt Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup vegetable oil
  • 1 cup pineapple juice
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple, drained

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. In another bowl, beat eggs, then mix in oil, pineapple juice, and vanilla. Gradually add to dry ingredients, mixing until just combined. Fold in crushed pineapple.
  4. Pour batter into prepared pan. Bake for 45-50 minutes or until a toothpick inserted comes out clean. Cool in pan for 15 minutes, then invert onto a wire rack to cool completely.
