Pineapple Cream Cheesecake

A creamy and tropical pineapple cheesecake with a buttery graham cracker crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • Fresh pineapple slices for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  2. Bake crust for 10 minutes. Let cool.
  3. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla. Fold in crushed pineapple.
  4. Pour filling over crust. Bake for 30-35 minutes until set. Cool completely, then refrigerate for 4 hours.
  5. Whip heavy cream and powdered sugar until stiff peaks form. Spread over chilled cheesecake and garnish with fresh pineapple slices.

Notes
