Pineapple Cream Cheese Cobbler

Ingredients

  • 1 stick (1/2 cup) butter
  • 1 egg, lightly beaten
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cans (20 oz each) pineapple chunks, drained
  • 8 oz cream cheese, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and pour it into a 9×13-inch glass baking dish.
  3. In a small bowl, mix together the egg, milk, flour, sugar, baking powder, and salt until smooth.
  4. Pour the batter directly over the melted butter in the baking dish—do not stir.
  5. Add the drained pineapple chunks, arranging them in as even a layer as possible.
  6. Drop the cream cheese pieces evenly over the top.
  7. Bake for 45 minutes, or until the top is golden brown and the edges are bubbling.
  8. Serve warm, maybe with a scoop of vanilla ice cream!
