- 4 cups powdered sugar
- ¼ cup full-fat coconut milk
- ½ tsp vanilla extract
- ½ tsp coconut extract (optional)
- 1 cup shredded sweetened coconut, toasted
- Crushed pineapple (optional for topping)
Instructions
- Preheat oven and prepare two 9-inch cake pans by greasing and flouring.
- In a bowl, sift together flour, baking powder, baking soda, cardamom, and salt.
- In a separate large bowl, cream together softened butter, oil, and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla and coconut extracts.
- Gradually add dry ingredients alternately with coconut milk, mixing gently after each addition.
- Fold in the drained crushed pineapple gently.
- Divide batter evenly between prepared pans.
- Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
- For the frosting, beat cream cheese and softened butter until smooth.
- Gradually add powdered sugar alternately with coconut milk, beating until smooth and fluffy.
- Mix in vanilla and optional coconut extract.
- Frost cooled cake layers and sprinkle toasted shredded coconut on top.
- Optional: Add extra crushed pineapple on top if desired.
Notes
Cardamom adds a unique warm spice pairing beautifully with coconut and pineapple. Use full-fat coconut milk for richer flavor and moisture. Toasted coconut on top gives a delightful texture contrast.
