- 1 box yellow cake mix
- 1 cup crushed pineapple, drained
- 1/2 cup coconut milk
- 3 large eggs
- 1/3 cup vegetable oil
- 1 cup sweetened shredded coconut
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a large bowl, combine cake mix, crushed pineapple, coconut milk, eggs, and oil. Mix until smooth. Fold in 1/2 cup shredded coconut.
- Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
- For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, then mix in remaining coconut milk until creamy.
- Frost cooled cake layers, sprinkling toasted coconut on top. Refrigerate for at least 1 hour before serving.
