Pineapple Coconut Dream Cake

Ingredients

  • 1 box yellow cake mix
  • 1 cup crushed pineapple, drained
  • 1/2 cup coconut milk
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup sweetened shredded coconut
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine cake mix, crushed pineapple, coconut milk, eggs, and oil. Mix until smooth. Fold in 1/2 cup shredded coconut.
  3. Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  4. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, then mix in remaining coconut milk until creamy.
  5. Frost cooled cake layers, sprinkling toasted coconut on top. Refrigerate for at least 1 hour before serving.
