Pineapple Coconut Dream Cake

A tropical-inspired cake with layers of pineapple and coconut flavors, perfect for summer gatherings.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 3 large eggs
  • 1/2 cup unsalted butter, softened
  • 1/2 cup coconut milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  3. Stir in vanilla extract and coconut milk. Gradually add flour, baking powder, baking soda, and salt, mixing until just combined.
  4. Fold in crushed pineapple and shredded coconut. Pour batter into prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool before serving.
