For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 1 cup pineapple chunks, fresh or canned
- 1 cup white rice
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until browned, about 5-7 minutes.
- Add pineapple chunks, soy sauce, honey, garlic powder, and ginger powder to the skillet. Stir well and cook for another 2-3 minutes.
- Pour in chicken broth and rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed. Season with salt and pepper to taste.
