Pineapple Chicken and Rice

A sweet and savory dish featuring tender chicken, juicy pineapple, and fluffy rice.

For the Crust:

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup pineapple chunks, fresh or canned
  • 1 cup white rice
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until browned, about 5-7 minutes.
  2. Add pineapple chunks, soy sauce, honey, garlic powder, and ginger powder to the skillet. Stir well and cook for another 2-3 minutes.
  3. Pour in chicken broth and rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed. Season with salt and pepper to taste.
