Pineapple Cheesecake

A creamy and tropical pineapple cheesecake with a buttery graham cracker crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • 1/2 cup sour cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Fold in drained crushed pineapple, then pour mixture over the crust.
  5. Bake for 45-50 minutes or until the center is set. Cool completely before refrigerating for at least 4 hours.

Notes

You can customize the seasonings to taste.
