- 1 cup fresh or frozen pineapple chunks
- 1/2 cup fresh or frozen blueberries
- 1 cup brewed cold coffee (or 1 shot espresso cooled)
- 1 cup milk (dairy or non-dairy)
- 1 cup ice
- 2 tablespoons granulated sugar (adjust to taste)
- 1/2 teaspoon vanilla extract
- Whipped cream for topping (optional)
- Fresh blueberries or pineapple slices for garnish (optional)
Instructions
- If using fresh fruit, freeze pineapple and blueberries for at least 1 hour for a thicker texture.
- Add the pineapple chunks, blueberries, cold coffee (or cooled espresso), milk, ice, sugar, and vanilla extract to a high-speed blender.
- Blend on high until completely smooth and creamy, about 45–60 seconds; stop and scrape down the sides if needed and blend again.
- Taste and adjust sweetness, adding up to 1 tablespoon more sugar if desired; blend briefly to combine.
- Pour into chilled glasses and top with whipped cream if using.
- Garnish with fresh blueberries or a small pineapple slice and serve immediately.
Notes
1) For a non-coffee version, replace coffee with 1/2 cup pineapple juice plus 1/2 cup cold milk. 2) Use frozen fruit to avoid dilution and achieve a thicker frappuccino texture. 3) To make it vegan, use a plant-based milk and coconut whipped topping.
