- 1 can (20 ounces) crushed pineapple, undrained
- 1 package (3.4 ounces) instant vanilla pudding mix
- 1 teaspoon rum extract
- 2 cups miniature marshmallows
- 1 1/2 cups sweetened coconut flakes
- 1 cup chopped toasted pecans
- 8 ounces Cool Whip, thawed
- Maraschino cherries, optional for garnish
Instructions
- In a large mixing bowl, combine the crushed pineapple (with juice) and the vanilla pudding mix.
- Add the rum extract, marshmallows, toasted pecans, and coconut flakes, mixing until well combined.
- Gently fold in the Cool Whip until fully incorporated.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve topped with a maraschino cherry, if desired.
Notes
For a non-alcoholic version, omit the rum extract or substitute with coconut extract. Toasted pecans can be replaced with other nuts or omitted for a nut-free version. Draining the crushed pineapple will result in a drier fluff, but keeping the juice adds moisture and flavor.
