  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 teaspoon rum extract
  • 2 cups miniature marshmallows
  • 1 1/2 cups sweetened coconut flakes
  • 1 cup chopped toasted pecans
  • 8 ounces Cool Whip, thawed
  • Maraschino cherries, optional for garnish

Instructions

  1. In a large mixing bowl, combine the crushed pineapple (with juice) and the vanilla pudding mix.
  2. Add the rum extract, marshmallows, toasted pecans, and coconut flakes, mixing until well combined.
  3. Gently fold in the Cool Whip until fully incorporated.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve topped with a maraschino cherry, if desired.

Notes

For a non-alcoholic version, omit the rum extract or substitute with coconut extract. Toasted pecans can be replaced with other nuts or omitted for a nut-free version. Draining the crushed pineapple will result in a drier fluff, but keeping the juice adds moisture and flavor.
