- 2 teaspoons baking powder

- 1 stick (8 tablespoons) cold unsalted butter
- 1 cup buttermilk
Instructions
- Preheat oven to 450°F (232°C).
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Freeze the stick of butter for 3-5 minutes to keep it cold, then cut it into small pieces.
- Use a fork or pastry cutter to cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Make a well in the center of the mixture and pour in the buttermilk.
- Gently mix with a fork until the dough just comes together; do not overwork.
- Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle.
- Fold the dough over onto itself 2-3 times to create layers, then pat it out again to 1-inch thickness.
- Use a biscuit cutter or glass to cut out biscuits and place them on a baking sheet.
- Bake for 12-15 minutes or until golden brown on top.
- Remove from oven and serve warm.
Notes
Keep the butter cold and avoid overmixing the dough to ensure tender, flaky biscuits. Using buttermilk adds acidity that reacts with baking soda for better rise and flavor.
