Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add vanilla extract and mix until combined.
- In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined to form a dough.
- Chill the dough in the refrigerator for 30 minutes.
- Roll or pipe the dough into desired shapes and place on a parchment-lined baking sheet, spacing about 1 inch apart.
- Bake for 15-17 minutes or until the edges are lightly golden.
- Allow cookies to cool completely on a wire rack.
- Optional: Melt semi-sweet chocolate chips and dip half of each cookie, then decorate with sprinkles if desired.
