Peppermint Chocolate Chunk Muffins

Festive and indulgent muffins with rich chocolate chunks and a refreshing peppermint twist, perfect for holiday baking.

For the Crust:

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp peppermint extract
  • 1 cup dark chocolate chunks
  • 1/2 cup crushed peppermint candies

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, melted butter, eggs, and peppermint extract until combined.
  4. Pour wet ingredients into dry ingredients and stir until just mixed; fold in chocolate chunks and half of crushed peppermint candies.
  5. Divide batter evenly among muffin cups, sprinkle with remaining peppermint candies, and bake for 18-20 minutes or until a toothpick comes out clean.
