For the Crust:
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp peppermint extract
- 1 cup dark chocolate chunks
- 1/2 cup crushed peppermint candies
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, melted butter, eggs, and peppermint extract until combined.
- Pour wet ingredients into dry ingredients and stir until just mixed; fold in chocolate chunks and half of crushed peppermint candies.
- Divide batter evenly among muffin cups, sprinkle with remaining peppermint candies, and bake for 18-20 minutes or until a toothpick comes out clean.
