Pear and Gorgonzola Flatbread

Ingredients

  • 1 cup sourdough starter (or naan bread/store-bought pizza dough as substitute)
  • 1/2 pear, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup gorgonzola cheese (or goat/feta cheese as substitute)
  • 1/4 cup walnuts
  • 1 cup balsamic vinegar
  • 1/4 cup brown sugar (or coconut sugar)
  • Arugula, for topping
  • 1 tbsp olive oil (for caramelizing onions)

Instructions

  1. Preheat oven to 400°F with baking stone or cast iron skillet for 10 minutes.
  2. In a skillet over medium heat, add olive oil and caramelize thinly sliced red onions, stirring frequently until soft and translucent.
  3. Add sliced pears to the skillet and cook for about 2 minutes to soften. Set aside.
  4. Spread sourdough starter or dough evenly on the preheated baking stone or skillet; bake for 10 minutes.
  5. Meanwhile, make balsamic glaze by boiling balsamic vinegar and brown sugar, then simmer and stir until reduced by half.
  6. Remove flatbread from oven; top with caramelized onions, softened pears, walnuts, and gorgonzola cheese.
  7. Bake again for an additional 5-10 minutes until toppings are warmed and cheese slightly melted.
  8. Remove from oven and top with fresh arugula and drizzle with balsamic glaze.
  9. Serve and enjoy.

Notes

Use naan or store-bought pizza dough if sourdough starter is unavailable. Substitute goat or feta cheese for gorgonzola. For a sweeter glaze, adjust sugar to taste. Adding arugula last helps keep it fresh and crisp.
