For the Crust:
- 4 large eggs, separated
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/3 cup all-purpose flour
- 1 1/2 cups whole milk, room temperature
- 1/4 cup fresh lemon juice
- Zest of 2 lemons
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Grease an 8-inch square baking dish.
- In a large bowl, cream butter and sugar until light. Beat in egg yolks, then mix in flour, lemon juice, zest, and milk until smooth.
- In a separate bowl, beat egg whites with salt until stiff peaks form. Gently fold into lemon mixture until just combined.
- Pour into prepared dish. Place dish in a larger pan; add hot water to come halfway up sides. Bake 45-50 minutes until top is golden and set.
- Cool completely on wire rack. Dust with powdered sugar before serving.
