For the Crust:
- 2 cups fresh okra, finely chopped
- 1/2 cup cornmeal
- 1/4 cup all-purpose flour
- 1 small onion, finely diced
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 tablespoons vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a large bowl, combine chopped okra, cornmeal, flour, diced onion, beaten egg, salt, black pepper, and garlic powder. Mix well until all ingredients are evenly incorporated.
- Heat vegetable oil in a skillet over medium heat.
- Scoop about 2 tablespoons of the okra mixture per patty and flatten slightly. Fry in batches for 3-4 minutes per side, or until golden brown and crispy.
- Transfer cooked patties to a paper towel-lined plate to drain excess oil. Serve warm.
