  • 2 cups fresh okra, finely chopped
  • 1/2 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 small onion, finely diced
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine chopped okra, cornmeal, flour, diced onion, beaten egg, salt, black pepper, and garlic powder. Mix well until all ingredients are evenly incorporated.
  2. Heat vegetable oil in a skillet over medium heat.
  3. Scoop about 2 tablespoons of the okra mixture per patty and flatten slightly. Fry in batches for 3-4 minutes per side, or until golden brown and crispy.
  4. Transfer cooked patties to a paper towel-lined plate to drain excess oil. Serve warm.
