Nun’s Puffs

Light and airy baked puffs made from a simple choux pastry, traditionally associated with convent baking.

Ingredients

For the Crust:

  • 1 cup water
  • 1/2 cup butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 tablespoons granulated sugar
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a saucepan, bring water, butter, and salt to a boil. Remove from heat and stir in flour until mixture forms a ball.
  3. Beat in eggs one at a time until smooth and glossy. Stir in granulated sugar.
  4. Spoon dough into prepared muffin cups, filling each about 2/3 full.
  5. Bake for 25-30 minutes until puffed and golden brown. Do not open oven during baking.
  6. Remove from oven, cool slightly, and dust with powdered sugar before serving.

Notes

You can customize the seasonings to taste.
