No Sugar No Flour Carrot Cake

For the Crust:

  • 2 cups grated carrots
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 3 eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix grated carrots, almond flour, coconut flour, eggs, coconut oil, applesauce, and vanilla extract.
  3. Add cinnamon, nutmeg, baking soda, and salt. Stir until well combined.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 30 minutes or until a toothpick inserted comes out clean.
  6. Let cool before serving.
