For the Crust:
- 2 cups grated carrots
- 1 cup almond flour
- 1/2 cup coconut flour
- 3 eggs
- 1/4 cup melted coconut oil
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, mix grated carrots, almond flour, coconut flour, eggs, coconut oil, applesauce, and vanilla extract.
- Add cinnamon, nutmeg, baking soda, and salt. Stir until well combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
