No Sugar Cottage Cheese Carrot Cake Bars

Ingredients

  • 1 cup cottage cheese
  • 1 cup unsweetened applesauce
  • 2 cups grated carrots
  • 2 eggs
  • 1 cup oat flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. In a blender, combine cottage cheese, applesauce, and eggs until smooth. Transfer to a bowl and stir in grated carrots.
  3. Add oat flour, cinnamon, nutmeg, and baking soda to the wet ingredients. Mix until just combined. Fold in walnuts if using.
  4. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool before slicing into bars.
