- 1 cup cottage cheese
- 1 cup unsweetened applesauce
- 2 cups grated carrots
- 2 eggs
- 1 cup oat flour
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
- In a blender, combine cottage cheese, applesauce, and eggs until smooth. Transfer to a bowl and stir in grated carrots.
- Add oat flour, cinnamon, nutmeg, and baking soda to the wet ingredients. Mix until just combined. Fold in walnuts if using.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool before slicing into bars.
