For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, whipped
- 2 cups diced fresh peaches
- 1/2 cup chopped pecans
- 1/4 cup caramel sauce (optional)
Instructions
1. Prepare the Crust:
- Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch ring mold. Chill for 15 minutes.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
- Layer half the cream cheese mixture over the crust. Top with half the peaches and pecans. Repeat layers.
- Chill for at least 4 hours or overnight. Drizzle with caramel sauce before serving if desired.
