			For the Crust:
- 24 Oreo cookies, crushed
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream, cold
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream (for ganache)
Instructions
1. Prepare the Crust:
- Combine crushed Oreos and melted butter. Press firmly into a 9-inch springform pan. Chill for 30 minutes.
- Beat cream cheese, peanut butter, powdered sugar, and vanilla until smooth. In a separate bowl, whip cold heavy cream to stiff peaks. Fold whipped cream into peanut butter mixture until combined.
- Spread filling over chilled crust. Smooth top. Refrigerate for at least 4 hours, or until set.
- For ganache, heat 1/4 cup heavy cream until steaming. Pour over chocolate chips. Let sit for 2 minutes, then stir until smooth. Drizzle over chilled cheesecake before serving.
