- ¾ cup graham cracker crumbs (about 5 graham crackers)
- 2 Tablespoons butter, melted
- 1 teaspoon granulated sugar
- ½ cup heavy whipping cream
- ⅓ cup plus 2 tablespoons powdered sugar, divided
- 8 ounces cream cheese, softened
- 1 cup fresh strawberries, pureed to make about ½ cup
- ½ teaspoon vanilla extract
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 350°F. Mix the graham cracker crumbs with the melted butter and granulated sugar. Press mixture into a small baking dish and bake for 8-10 minutes until lightly golden. Remove and let cool.
- Whip the heavy cream in a large bowl until stiff peaks form. Beat in 2 tablespoons of powdered sugar and set aside.
- In a separate bowl, beat together the cream cheese and ⅓ cup powdered sugar until smooth. Add vanilla extract and mix in the strawberry puree until evenly combined.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Crumble the cooled graham cracker crust into the bottom of serving cups or dishes.
- Top the crust with the strawberry cheesecake mousse and garnish with fresh strawberries.
- Refrigerate for at least 15 minutes before serving.
Notes
This no-bake mousse is quick to prepare and can be served in mini cups for easy portioning. For best texture, chill well before serving. Fresh strawberries add a bright, fresh garnish.
