No-Bake Mini Key Lime Pies

Easy and refreshing no-bake mini key lime pies with a graham cracker crust and creamy lime filling.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 tsp lime zest
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

Instructions

1. Prepare the Crust:

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of a muffin tin lined with cupcake liners.
  2. In another bowl, whisk together sweetened condensed milk, key lime juice, and lime zest until smooth.
  3. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold into the lime mixture.
  4. Spoon the filling over the crusts in the muffin tin. Chill in the refrigerator for at least 4 hours or until set.
  5. Garnish with additional lime zest or whipped cream before serving.

Notes

You can customize the seasonings to taste.
