For the Crust:
- 1 lb ground beef
- 1 cup fresh spinach, chopped
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 4 oz mozzarella cheese, cut into small cubes
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, spinach, garlic, breadcrumbs, egg, Parmesan, salt, pepper, and parsley. Mix until well combined.
- Take a portion of the mixture, flatten it slightly, place a mozzarella cube in the center, and form into a ball, ensuring the cheese is fully enclosed. Repeat with remaining mixture.
- Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, about 2-3 minutes per side.
- Transfer meatballs to the prepared baking sheet and bake for 15-20 minutes, or until cooked through. Serve warm.
