For the Crust:
- 1 1/2 cups warm water
- 1 tbsp sugar
- 2 tsp salt
- 1 packet active dry yeast
- 4 1/2 cups all-purpose flour
- 2 tbsp unsalted butter, melted
- 8 oz mozzarella cheese, cut into sticks
- 10 cups water
- 2/3 cup baking soda
- 1 large egg yolk beaten with 1 tbsp water
- Coarse salt for sprinkling
Instructions
1. Prepare the Crust:
- In a large bowl, mix warm water, sugar, and salt. Sprinkle yeast on top and let sit for 5 minutes until foamy.
- Stir in flour and melted butter until a dough forms. Knead for 5 minutes until smooth. Cover and let rise for 1 hour.
- Preheat oven to 450°F (230°C). Divide dough into 8 equal pieces. Flatten each piece and place a mozzarella stick in the center. Roll dough around cheese, sealing edges tightly.
- Bring 10 cups water and baking soda to a boil. Boil each pretzel for 30 seconds, then transfer to a baking sheet.
- Brush pretzels with egg wash and sprinkle with salt. Bake for 12-15 minutes until golden brown. Serve warm.
