Molten Chocolate Lava Cupcakes with Creamy Filling

Decadent chocolate cupcakes with a gooey molten center and a surprise creamy filling.

For the Crust:

  • 1/2 cup unsalted butter
  • 4 oz semi-sweet chocolate, chopped
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup heavy cream
  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Grease 8 muffin cups or line with parchment paper.
  2. Melt butter and chocolate in a double boiler, stirring until smooth. Remove from heat and whisk in powdered sugar.
  3. Beat in eggs, egg yolks, and vanilla extract. Stir in flour until just combined.
  4. In a separate bowl, whip heavy cream, cream cheese, and granulated sugar until smooth.
  5. Fill each muffin cup halfway with chocolate batter. Add 1 tbsp of creamy filling, then top with more chocolate batter.
  6. Bake for 12-14 minutes until edges are set but centers are still soft. Let cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
