For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup canned pumpkin puree
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 2 large eggs
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press 1 tbsp into each liner.
- Beat cream cheese and 1/2 cup sugar until smooth. Add pumpkin, vanilla, and pumpkin pie spice.
- Add eggs one at a time, mixing just until combined.
- Spoon filling over crusts, filling almost to the top.
- Bake for 20-25 minutes until set. Cool completely before serving.

You can customize the seasonings to taste.
