Mini Pumpkin Cheesecake Bites

Delicious bite-sized pumpkin cheesecakes with a graham cracker crust, perfect for fall gatherings.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 2 large eggs

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press 1 tbsp into each liner.
  3. Beat cream cheese and 1/2 cup sugar until smooth. Add pumpkin, vanilla, and pumpkin pie spice.
  4. Add eggs one at a time, mixing just until combined.
  5. Spoon filling over crusts, filling almost to the top.
  6. Bake for 20-25 minutes until set. Cool completely before serving.

Notes
