- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 2 tbsp granulated sugar
- 8 oz cream cheese, softened
- 1/2 cup canned pumpkin puree
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1 large egg
- Whipped cream for topping (optional)
Instructions
- Preheat oven to 325°F. Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press into the bottom of each liner.
- Beat cream cheese until smooth. Add pumpkin, sugars, vanilla, and spice; mix well. Add egg and mix until just combined.
- Spoon filling over crusts. Bake for 18-20 minutes, until set. Cool completely, then chill for at least 2 hours.
- Top with whipped cream before serving if desired.

You can customize the seasonings to taste.
