Mini Pumpkin Cheesecake Bites

Delicious, creamy pumpkin cheesecake in a bite-sized form, perfect for fall gatherings.

Ingredients

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 2 tbsp granulated sugar
  • 8 oz cream cheese, softened
  • 1/2 cup canned pumpkin puree
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 large egg
  • Whipped cream for topping (optional)

Instructions

  1. Preheat oven to 325°F. Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press into the bottom of each liner.
  3. Beat cream cheese until smooth. Add pumpkin, sugars, vanilla, and spice; mix well. Add egg and mix until just combined.
  4. Spoon filling over crusts. Bake for 18-20 minutes, until set. Cool completely, then chill for at least 2 hours.
  5. Top with whipped cream before serving if desired.
