Mini Pumpkin Cheesecake Bites

Delicious bite-sized pumpkin cheesecakes with a graham cracker crust, perfect for fall gatherings.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 tbsp sugar
  • 8 oz cream cheese, softened
  • 1/2 cup pumpkin puree
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • 1 large egg
  • Whipped cream for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs, melted butter, and 1 tbsp sugar. Press 1 tsp of mixture into each liner.
  3. Beat cream cheese until smooth. Add pumpkin puree, 1/4 cup sugar, vanilla, and pumpkin pie spice. Mix well.
  4. Add egg and beat until just combined. Spoon filling over crusts, filling almost to the top.
  5. Bake for 20-25 minutes until set. Cool completely before refrigerating for at least 2 hours.
  6. Top with whipped cream before serving.

Notes

You can customize the seasonings to taste.
