- 4 mini pizza crusts
- 8 oz brie cheese, sliced
- 1/2 cup dried cranberries
- 1/2 cup walnuts, toasted and chopped
- 1/4 cup honey
- 1 tsp red pepper flakes
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Place mini pizza crusts on a baking sheet.
- Brush each crust with olive oil and season lightly with salt and pepper. Arrange brie slices evenly over the crusts, then sprinkle with dried cranberries and toasted walnuts.
- Bake for 10-12 minutes, until cheese is melted and crust is golden.
- While pizzas bake, warm honey in a small saucepan with red pepper flakes over low heat for 2-3 minutes.
- Drizzle hot honey over baked pizzas, garnish with fresh thyme, and serve immediately.
Notes
Toast walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant for maximum crunch. Use high-quality brie for the creamiest melt. Prepare hot honey ahead and store in a jar for up to a week.
