Mini Pineapple Condensed Coconut Milk Cheesecakes

Delightful mini cheesecakes with tropical pineapple flavor and creamy coconut milk.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup sweetened condensed coconut milk
  • 1/4 cup crushed pineapple, drained
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream
  • Pineapple slices for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs with melted butter. Press into the bottom of each liner.
  3. Beat cream cheese until smooth. Add condensed coconut milk, pineapple, and vanilla. Fold in whipped cream.
  4. Spoon filling over crusts. Bake for 20 minutes. Chill for 2 hours.
  5. Garnish with pineapple slices before serving.
