For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/2 cup sweetened condensed coconut milk
- 1/4 cup crushed pineapple, drained
- 1 tsp vanilla extract
- 1/2 cup whipped cream
- Pineapple slices for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs with melted butter. Press into the bottom of each liner.
- Beat cream cheese until smooth. Add condensed coconut milk, pineapple, and vanilla. Fold in whipped cream.
- Spoon filling over crusts. Bake for 20 minutes. Chill for 2 hours.
- Garnish with pineapple slices before serving.
