Irresistible Mini Crème Brûlée Cheesecakes

A delightful fusion of creamy cheesecake and caramelized crème brûlée in perfect mini portions.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup brown sugar (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line muffin tin with cupcake liners.
  2. Mix graham cracker crumbs with melted butter. Press 1 tbsp mixture into each liner.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
  4. Divide batter evenly among cups. Bake 20-25 minutes until centers are set.
  5. Cool completely, then refrigerate 4 hours.
  6. Sprinkle brown sugar evenly over tops. Caramelize with kitchen torch until bubbly.
