Mini Chicken Pot Pie Muffins

Delicious bite-sized chicken pot pies baked in a muffin tin for a fun and easy meal.

For the Crust:

  • 1 cup cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1/2 cup cream of chicken soup
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 package refrigerated biscuit dough (8 biscuits)
  • 1/4 cup shredded cheddar cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a muffin tin.
  2. In a bowl, mix together chicken, vegetables, soup, milk, garlic powder, onion powder, salt, and pepper.
  3. Flatten each biscuit and press into the muffin tin to form a crust.
  4. Spoon the chicken mixture into each biscuit-lined muffin cup.
  5. Sprinkle shredded cheddar cheese on top of each muffin.
  6. Bake for 15-20 minutes or until the biscuit crust is golden brown.
  7. Let cool for 5 minutes before serving.
