Mini Cherry Peanut Butter Cheesecakes

Creamy peanut butter cheesecakes with a graham cracker crust and sweet cherry topping, perfect for individual servings.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can cherry pie filling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a muffin tin with 12 paper liners.
  2. Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press 1 tablespoon into each liner to form crusts.
  3. Beat cream cheese, peanut butter, and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla. Divide filling among crusts.
  4. Bake for 20-25 minutes until set. Cool completely, then refrigerate for at least 2 hours. Top with cherry pie filling before serving.
