Mini Caramel Apple Cheesecake Bites

Delicious bite-sized cheesecakes with a graham cracker crust, creamy filling, and caramel apple topping.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1/4 cup caramel sauce
  • 1/2 tsp cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line mini muffin tin with paper liners.
  2. Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press into liners to form crusts.
  3. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs and vanilla, mix well. Spoon over crusts.
  4. Bake 15-18 minutes until set. Cool completely, then refrigerate 2 hours.
  5. Sauté apples with cinnamon until tender. Cool, then top cheesecakes with apples and drizzle with caramel.

Notes

You can customize the seasonings to taste.
