For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 2 tbsp granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced
- 1/4 cup caramel sauce
- 1/2 tsp cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line mini muffin tin with paper liners.
- Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press into liners to form crusts.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs and vanilla, mix well. Spoon over crusts.
- Bake 15-18 minutes until set. Cool completely, then refrigerate 2 hours.
- Sauté apples with cinnamon until tender. Cool, then top cheesecakes with apples and drizzle with caramel.
