For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp unsalted butter, melted
- 1 tbsp granulated sugar
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 medium apple, peeled and finely diced
- 1/4 cup caramel sauce
- 1/4 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners.
- In a bowl, mix graham cracker crumbs, melted butter, and 1 tbsp sugar. Press 1 tsp of mixture into each liner.
- In another bowl, beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix until just combined.
- Spoon cheesecake batter over crusts, filling each liner 3/4 full. Bake for 15-18 minutes until set. Cool completely.
- Top each cheesecake with diced apples, drizzle with caramel sauce, and sprinkle with cinnamon. Chill before serving.
