Mini Caramel Apple Cheesecake Bites

Delicious bite-sized cheesecakes with a graham cracker crust, creamy cheesecake filling, and topped with caramel and diced apples.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp unsalted butter, melted
  • 1 tbsp granulated sugar
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 medium apple, peeled and finely diced
  • 1/4 cup caramel sauce
  • 1/4 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1 tbsp sugar. Press 1 tsp of mixture into each liner.
  3. In another bowl, beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix until just combined.
  4. Spoon cheesecake batter over crusts, filling each liner 3/4 full. Bake for 15-18 minutes until set. Cool completely.
  5. Top each cheesecake with diced apples, drizzle with caramel sauce, and sprinkle with cinnamon. Chill before serving.

Notes

You can customize the seasonings to taste.
