Mini Bundt Cakes

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a mini bundt cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
  6. Pour batter into the prepared pan, filling each cavity about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow cakes to cool in the pan for 10 minutes before transferring to a wire rack.
