Mini Banana Pudding Cheesecakes

Delightful mini cheesecakes with layers of banana pudding and creamy cheesecake filling, perfect for individual servings.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 box instant banana pudding mix
  • 2 cups cold milk
  • 2 ripe bananas, sliced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Mix graham cracker crumbs, melted butter, and sugar. Press into the bottoms of 12 lined muffin cups and bake for 5 minutes. Cool completely.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip heavy cream until stiff peaks form. Fold whipped cream into cream cheese mixture.
  3. Prepare banana pudding with cold milk according to package instructions. Layer each crust with cheesecake filling, banana slices, and pudding. Chill for at least 2 hours before serving.
