Melt-in-Your-Mouth Strawberry Cookies

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries, crushed into powder
  • 1/4 cup powdered sugar (for dusting)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, salt, and strawberry powder. Gradually add to wet ingredients, mixing until just combined.
  4. Roll dough into 1-inch balls and place on prepared baking sheets, spacing 2 inches apart. Flatten slightly with the bottom of a glass.
  5. Bake for 10-12 minutes until edges are just set but centers are still soft. Cool on baking sheets for 5 minutes before transferring to wire racks.
  6. Dust cooled cookies with powdered sugar before serving.

Notes

You can customize the seasonings to taste.
