For the Crust:
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine chicken, zucchini, cherry tomatoes, olives, olive oil, oregano, garlic powder, salt, and pepper. Toss to coat evenly.
- Transfer the mixture to the prepared baking dish and spread into an even layer.
- Bake for 25-30 minutes, or until chicken is cooked through and zucchini is tender.
- Remove from oven and drizzle with lemon juice. Sprinkle feta cheese on top.
- Serve warm and enjoy.
