Mediterranean Chicken Zucchini Bake – Low-Carb Dinner

For the Crust:

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine chicken, zucchini, cherry tomatoes, olives, olive oil, oregano, garlic powder, salt, and pepper. Toss to coat evenly.
  3. Transfer the mixture to the prepared baking dish and spread into an even layer.
  4. Bake for 25-30 minutes, or until chicken is cooked through and zucchini is tender.
  5. Remove from oven and drizzle with lemon juice. Sprinkle feta cheese on top.
  6. Serve warm and enjoy.
