Mediterranean Chicken Zucchini Bake

A flavorful and healthy one-pan dish featuring tender chicken, zucchini, and Mediterranean spices.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss zucchini, bell pepper, cherry tomatoes, olive oil, garlic, oregano, basil, paprika, salt, and pepper.
  3. Arrange chicken breasts in a baking dish and season with salt and pepper. Spoon the vegetable mixture around the chicken.
  4. Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender.
  5. Sprinkle feta cheese over the top and bake for an additional 5 minutes.
  6. Serve warm.
