For the Crust:
- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 red bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large bowl, toss zucchini, bell pepper, cherry tomatoes, olive oil, garlic, oregano, basil, paprika, salt, and pepper.
- Arrange chicken breasts in a baking dish and season with salt and pepper. Spoon the vegetable mixture around the chicken.
- Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender.
- Sprinkle feta cheese over the top and bake for an additional 5 minutes.
- Serve warm.
